I have a Voigtlander brand LTM->m mount adapter that I took off a Voigtlander 50mm f1.5
The adapter has "50" and "75" written on it, which I guess means it's meant for those focal lengths.
Is there any reason I wouldn't want to use this adapter on a Voigtlander 15mm to then mount on an m-mount->NEX adapter?

No, no reason. It has to do with what frame lines get called up in the camera's internal finder, and since you'll be using an external finder, you don't care what the camera's built-in finder shows.
