Yup, cannot go wrong with that at all. Gorgeous films. Keep it real "classic" and use D-76 1-1. Or for the same development times use Rodinal 1:50 for 12-13min at 20C for both as a good starting point.

Just dawned on me how many cameras and lenses I buy from the classifieds on this site! That FM2 was bought here too. 😱

HP5 for tonality, as previously stated. Lovely, lovely film that scans very well. I expose it at 325.
Fuji Acros 100 is also terrific.

TriX and PlusX are just fine. Go for the 400TX
Now, the Ilfords are very nice and if you are on the cheapo side, try the FOMAS
If you want smooooottthhhh film with no grain Fuji Acros is the ticket
Agfa went down the drain in 2005, but the films are still sold as Rollei Retro
even though a new batch is on the works thanks to Mirko from Fotoimpex who bought one of the factories and (re)-hired most of the tehcnicians
