Can the Leica Summarit 75mm f/2.5 and/or Summarit 90mm f/2.5 be used on the ZI body, or would it require using accessory viewfinders (from Cosina)?

Well, the ZI body has neither 75 nor 90 framelines. It does have 85 framelines, and those should work pretty well with a 90mm Summarit. For the 75mm lens, you'll likely want an accessory viewfinder (or, another body with built-in 75mm framelines).

Moreover the 75 will bring up 50 frameline on ZI, and it cannot be even adapted to bring 90 (like 40 Nokton can be adapted to bring up 35 instead of 50).

I think you can work with a 75 on the ZI. I have just started. Here is an example that worked very well in terms of framing from my very first roll with the 75/2:
eyeing the imaginary frameline, framing the imaginary eye
I find toggling between the 50 and 85 FL can be useful, but presumably less and less necessary the more you get used to it. I think I kind of naturally see in 75, anyway.
I have wondered about having the mount changed, however...
Stephen Gandy's Cameraquest site has some used CV 75 finders at half price right now.

I use the CV 90mm, no problem, brings up the 85 frameline.
