I was first thinking - for longer trips - just shoot color and do the BW conversion in PS. Well - can be done, but stronger filtering will bring banding in the sky. I was worrying to "miss color shots" just when my camera will be loaded with BW. I guess I should stop worrying.
Still - as much as I love BW, I would hardly decide to skip color.

99,9% B/W for me. I shoot it even though most people around me think someone should tell me they have now invented cameras that take colour photos. I just don't see in colours. I see light and shadows and that is what I try to capture.

I voted for b&w because I really love b&w photographs and that’s what I shoot 98% of the time. However; there are occasionally a few things that simply demand color capture. In some circumstances I have photographed a subject with both and was never quite happy with a b&w print. If I had to choose one, it would be b&w. Sometimes I wonder though if color weren’t an option (having only b&w film with me) would I be more satisfied with the black and white photo. Maybe!

B&W. Between shooting almost nothing but for a decade or so and being partially colorblind, it just works for me.

The best camera is one that still works!
One problem I perceive with colour (if you're a film shooter) is the limitations in high speed colour film ... there's not too many choices! I think you can still get Fuji 1600 superior but I don't see it listed at Freestyle or many other places so obviously it's not a hot seller.
My experiences with Fuji Pro 800Z left me a little non plussed ... it's a nice film but exhibits a bluish tinge a lot of the time, particularly in artificial light. Black and white film negates this problem and allows you to concentrate solely on composition and content.

When I got back into photography, & especially after my 1st RF camera my intentions were to shoot B&W. Then of course I saw what some of the others were doing with color & good deals came along so I couldn't pass any up. Now that C-41 processing is getting more & more scarce I will weed myself off the stock of color film I have & concentrate on B&W. Besides my darkroom isn't color friendly!

I can always scan and convert later if needed.
You can't "add" Color with BW scans..
But you can "subtract" Color to get BW from your scans.
