Hi there - I've just received my shiny new bessa-r at the weekend
One thing that I'm not completely sure about and is almost certainly a stupid question but...

I find the film speed selection dial a little confusing... I have some 800 film - 800 is not actually marked on the dial - but looking at the other settings it seems like the film speed doubles every 3 notches - is that right..? So the setting for 800 would be 3 notches past 400 (one notch before 1000)??

Am I right?

Yep, that's right - the scale is in 1/3 f-stop progression:

25-32-40-50-64-80-100-125-160-200-250-400-500-640-800-1000-1250-1600-2000-2500-3200

Strange ...... there is a "800" mark on my R2 ...... 🙄

Correct. The standard sequence of film speeds in 1/3-stop intervals is:

25, 32, 40, 50, 64, 80, 125, 160, 200, 250, 320, 400, 500, 640, 800, 1000, 1250, 1600.

So, one click past 400 is 500, two clicks past is 640, and three clicks past is 800.
