Anyone know the difference between the Noblex 135 U & UC. Cant fond anything online showing an actual difference between the two models...

That's the difference between the UC and the C, not the UC and the older model U, which is what the OP asked about. The linked data sheet identifies the following distinctions between the "C" models and the prior generation:
These panorama cameras for 35mm cartridge film have following essential novelties opposite the present models:
1. The shift of the main switch of underside to upper front of the camera made the operation essential easier.
2. The objective drum run to exposure start position is accelerated by addition of 'fast forward' run phase. Especially
by using of long-time exposure range the exposure run time-save is enormous.
3. If no operating device on camera was pressed the camera switches off himself after 4 minutes.
4. If camera turned off manually the shutter release button is locked against inadvertently pressing.
5. After camera switch on and after every exposure event an automatic battery voltage control is carried out.
