I was under the impression that once you make an EV adjustment with the menu option, that the adjustment should remain unchanged until you go back in and change it; however, that's not what's happening my case. After I take the shot, it automatically resets to 0 every time.
Per the manual:
"Particularly when taking several pictures in succes-
sion, e.g. if you want a series of pictures to deliberate-
ly have a slightly lower or higher exposure for a partic-
ular reason, exposure compensation is a very useful
function. Unlike Metering memory lock, once set it
remains effective until you (deliberately) reset it..."
Is there something I'm missing here? I usually shoot in Aperture mode.

Because the M8 has a tendency to overexpose, I have my EV permanently set to -2/3. It never strays from that setting. Maybe you have a problem with the camera. Sorry I cannot be more helpful

Does it do it when in a saved user menu setting ... 1, 2 or 3? I had a similar problem when I wasn't using saved user profiles ... once I set up three different user profiles with exposure compensation and selected one it was OK.
Also if you're using a half case it can be easy to press buttons on the back of the camera without realising it which can make the camera jump back to it's default settings.

if you specifically set it as one of the 3 user profiles it should stay put. If it is just pre set but not as a profile and you for any reason go into the menu section it will cancel the pre set settings when you return. I would be better off without the pre sets.

I just realized that I in fact, did have it set on a user profile...I put it on 0 profile and the EV setting remained where I set it.
