Besides the Nikon F6, which I think is still being manufactured new, and the Leica M7 and MP and MA(?), what other film cameras are being made new today?

You seem to be limiting yourself to 35 mm film. There are some fine 120 film cameras in production, e.g the Fujifilm folders, the Holga (a fine mess).
Anyway, for 35 mm film handling the Nikon F6 is a pleasant surprise every time I use it. Reads DX to set ISO which can be overridden. Advances the film to the first frame in the blink of an eye. I set the film transport to „Continuous Silent“ which is really subdued. Rewinds the film into the cassette or leaves the leader out, again configurable. Data imprint on the leader and between frames is very useful.

Both fuji/bessa folders were a one-time production. Or, at least, they are not being produced anymore.
Hasselblad h6x is a new camera that takes film backs as well as digital backs, so that counts.

Lomo still makes a few fun models that everyone overlooks: The LC-Wide, LC-A+ (new version of the Russian model), LCA-120 (6x6 with a wide 38mm lens), reloadable-disposables and the Sprocket Rocket. Likewise there are still Diana's / other toy cameras I haven't mentioned here like the Lubitels / Blackbird TLRs.
But yeah, in terms of professional quality 35mm stuff, that's pretty much only the F6 and Leica M's left, seeing as Cosina / Voigtlander / Zeiss stopped all production on film bessas / Zeiss Ikons, and Nikon FM10s.
In the instant / pinhole / LF world there are mostly kickstarters and Fujifilm Instax derivatives of course (MINT and Intrepid for example).

I bought a new Bessa R4M from B&H in January 2018.
(Of course, they’re no longer being made. )
The price was discounted to $799US at the time.
It’s now back up to $999.
I bought new because they are seldom seen on eBay without lens and the new price at $799 was close enough to the historical used price to make it worth the difference.

My new VDS arrived this monday:
I think Shen-hao, Ebony, Chamonix and Wista still produce cameras as well. Then you have a huge amount of new cameras being made through Kickstarter, like the above mentioned Reflex, and the hugely sucessful Intrepid.

I am waiting on my new Mercury "Universal" Camera to arrive. It was originally designed to be in Medium format but now in large format also. You purchase it as a group of lensboards, focusing mounts, backs spacers etc to assemble the camera you want.
Also a back for the Fuji Instax film is available.
Most of the parts are open sourced 3D & printed to order.

It'll be interesting to see how long some of this old-stock stuff stays around. Cameraquest has some Bessa models too I believe.
Same situation with the Fuji folders... Its out of production, but B&H keeps "finding" small quantities of unsold cameras to put back on sale. Tempting, but the price goes up each time.
One shop I know of still had at least one new Nikon FM10 on the shelf, but I think they finally sold it. But there might be others out there. Makes one wonder about the F6... I assume they make them in small batches as-needed? You could buy a new one today but no telling when it was made.
