I was thinking of taking my Trip on an upcoming skiing holiday. Am I right in thinking that if I'm using, say HP5+, that I should set the meter dial to 200asa but develop the film for 400asa so I can get the over-exposure needed to avoid grey snow? Thanks.

That's the idea with the exposure compensation, but you might find that a couple of stops is needed.

It will depend on how much light gets bounced off the snow on to the subject (you could think that he/she/it is surrounded by a huge ground-sized reflector) versus grey overcast conditions where the is not much "fill-in" effect but the meter still sees a mostly white scene.
