Photo advice: Greece, Santorini

I'm thinking of going to Greece in early October for a short honeymoon and since both of us are fond of photography I'm wondering what could be the most attractive places to glimpse local life and make street photos. I'm thinking of visiting Plaka and Piraeus in Athens and then going to Santorini. There are many photos of the Santorini's beautiful views and architecture in the internet but most are just.. lifeless. I would love to capture local life and make classic type street shots in such surrounding and for that reason I'm interested in the local villages, markets, ports, ferries, fishermen etc. As you could guess, I'm not especially interested in the historical/archeologic sites and museums.

I will be also bringing a 4x5 field camera with me for photographing sunset and hope to do some long exposure sea shots. However Oia located at the western coast seems too distant from the places you would go to for doing long exposure sea work before sunrise (though I enjoy getting up early for some hiking) and I'd appreciate a hint about what is a nice place to live in and go to for that type of shots.

There should be not so many tourists in Santorini at that time of the year and accomodation is much cheaper which is important because we'll be going for a longer trip to Asia in the late autumn or winter. That said, do you think Santorini should meet my expectations? Are there better places (probably not so touristish) in Greece to get to know about the local life? My experience of travelling Asia and my home country (Ukraine) indicates that in the majority of cases you are better off staying in the rural areas. There you meet friendly, nice folks and find more to photograph. Speaking of the other countries, I'd expect the less popular places in Italy to be just as interesting but it also seems more expensive and I'd prefer not to pay more than 35-40 EUR for the accomodations at this time. So, any hint is appreciated.
 
I have nevcer been in Santorini, but saw very good (IMO) non touristic pictures of it here

circue, I was checking on the Santorini hotels and found quite many that are open all year round. Start of October is definitely not that bad. Here is an example: http://www.santonet.gr/hotels/antonia/. They have lower rates from Oct 1. But if you say I may have a hard time trying to find a place to live and eat at other places, I will consider the twentieth of September. And I will definitely think about the Crete. I have just ordered an LP Greek Islands travel guide:)
BTW, logistics of travelling Greece seem pretty nice, for example I can easily check the ferries schedule and tickets availability online.
 
Good luck and congrats. Dont know about the 4x5 tho. Id take my Hasselblad or Mamiya 6 for the longish exposures.
