The tab on the plastic aperture coupling ring broke off. Is replacing the ring a DIY job or should I find a repair shop to do it (I'm in EU).

Plastic age hardens. Cheap to make, but then it is gone. If replaced, the part is likely old already.
Ebay is full of F and F2 cameras. They are pro construction.

I have F2.
I tried to have a look and found out that one mount screw's head is stripped. I won't be able to even get to the aperture coupling ring myself...

Stripped screws can be removed - you can drill them out although I've never tried that with a camera
A replacement part might be available and plastic would be fine - if aging plastic is a problem, all similar cameras manufactuerd with that plastic at that time would be on the brink of failure - and they are not. It could be usage, conditions, defects along w aging and randomness that caused yours to fail
If you had the time and money - you could 3D print a replacement
