At the moment I've loaded a 400 ASA film and my lens goes up to f 2.8

Bracket like fury, with 1-stop rests. The odd thing is that a wide range of exposures is likely to be acceptable -- sometimes 2-3 stops or more. All you get is different moods.
Soon you learn which direction to bracket, and by how much. Too much depends on your metering technique to say which way will work best for you.

I would say meter off of the neon, and bracket. Both plus and minus.
