What sort of photography is the FE2 especially suited to?

A great camera, and as others have mentioned, extremely reliable even now. I personally love the Nikon design of having the wind lever act as the meter switch; it's essentially impossible to leave the meter on inadvertently.

No one has mentioned another excellent feature of the camera -- 1/250th flash synch, and TTL flash with several of the Speedlites.

The FM/FE series doesn't give you 100% viewfinder coverage, like the pro Fs do, but this is a niggle. Also, the meter needle can be hard to see in dim light. Another niggle.

Correct me if I'm wrong, but I thought you do have AE lock with this camera. I forget how it's done, though.
 
The Self-timer being pushed in activates the exposure lock. The needle continues to move, but that is to inform you what the exposure will be if you release the lock. This feature came out with the Nikkormat El and was a big deal. It was an analog circuit. Other features worth mentioning: double exposure control, limited but interchangeable viewscreens, exposure compensation.
 
The FE2 is good for action and dpeending on the lens for macro (micro nikkor 55/2.8 or the 100/xx) and also for all purpose with a good 50/1.4 or withthe best 28 there is... 28/2.8 AiS

I had one, and now have the FE which is a lovely camera
 
Anyone here has a problem with the FM, FE et al., lever poking you in the eye?

I do. I have the FE2/E series 50-1.8 combination, and I would use it all the time if it were not for the winding lever standoff needed for shooting.
