I like the one body approach, all this hype about multiple backup bodies, only a justification for the sake of "having"
I have been using one single M4 for the past 20 years or so, shot loads and loads of film in lots and lots of countries all around the world, never missed or needed a "back-up" body.

I've carried an M6 and two lenses on trips but always add my Olympus Stylus. The Stylus is light, inexpensive, has a flash, and a better than just decent lens.

I second the advice from Breeze : DO NOT PUT THE FILM in checked baggage, it must be in carry on. Get some larger film shield bags (hold up to 40rolls - just the plastic container w/o carton box) and you save plenty of volume. When you make such a unique trip don't risk x-ray damage of your films. Good luck and have fun.
 
Don't ever put any film in the check-in luggage!

You could get a larger bag to carry onboard.

The guide books might go in check-in luggage to save space.

You could buy film on a few strategic places during the trip and send developed film home with UP etc. This saves space.

On my last trip (much shorter than yours though) I had two bodies, just in case one fails. Having the only camera fail would have been a disaster for me. I chose medium format for the other camera.

Travelling with medium format camera and a rangefinder made me carry two type of films as well as two sets of lenses. I really enjoyed the medium format and two film backs (one for color, one for b&w). The bag was not light though but I was not backpacking either.

I really enjoyed having some short rolls of fast film as well (Delta 3200 was my choise). Fast film was a real joy for the evenings and night shots!
