"Rock and Roll Animal" - Lou Reed (hated it when I was young, but now I think it's quiet good actually)
"Lust for Life" - Iggy Pop
"God" Rip Rig + Panic
and, why not, "Ziggy Stardust" - David Bowie
Of course all these and the others above are albums I liked and still like, but to me their sleeve design still works in some way or another.

Henry Diltz's album covers for CSN and America. I watched "Under The Covers" a few years ago and found out who had been shooting my favorite albums and musicians.
The stories behind the photos were as interesting as the photos themselves. In the CSN photo, they hadn't named the band. A day or so later, they did name the band and realized the members were in the wrong order. They decided to reshoot at the abandoned house they had found...only to find it was gone. It had been torn down the day before.
For Morrison Hotel, they were denied permission to shoot in the lobby, but noticed the clerk walk away from the desk when they were outside. Diltz had the band run in and pose by the window. Afterward, they decided to get a beer and found a cafe nearby named "Hardrock Cafe".

At the moment, I'm reading "Who Shot Rock and Roll" by Gail Buckland. Great photos and back stories there too.

Possibly not strictly photos, but I've liked the art on the original vinyl versions of Chicago V, VI, and ViII. Especially VII.

VI was lithographed. The actual consumer product was lithographed, it wasn't a photo of a lithograph. Similarly, VII was embossed. Maybe not unique, but out of the ordinary and they felt like quality. I liked the music, too.

I really like Joni Mitchell's cover for "Hejira" from 1976. I'm not sure who the photographer was. Joni strikes a dramatic pose in a black cape, and there's an image of a highway superimposed on her torso. There is a strong travel theme to the songs. It kind of represents introversion and exploration to me.
I also like Anton Corbijn's panoramic photo in Death Valley on U2's "Joshua Tree", which is kind of the opposite to Joni Mitchell. It places the band members as elements within the landscape, whereas Joni's places the landscape within the portrait figure.
