My favourite ones:

The benefit of seeing can come only if you pause a while, extricate yourself from the maddening mob of quick impressions ceaselessly battering our lives, and look thoughtfully at a quiet image...
by Dorothea Lange

and

when Garry Winogrand asked how he felt about missing photographs while he reloaded his camera , he answered "There are no pictures while I'm reloading"

You can read the whole story here.

Most of my favorites have already been posted... the ones that usually go through my head when I'm prawling the streets are Winogrand's "burning desire" and "no pictures while reloading", Capa's "not close enough" and Evans's "you are not here long". Here are some more I should adhere to:

"If I stand in front of something, instead of arranging it, I arrange myself." -Diane Arbus

"It's more important to click with people than to click the shutter." -Alfred Eisenstaedt

And here's an old favorite that can be quite relevant to photography:

"The voyage of discovery is not in seeking new landscapes but in having new eyes." -Marcel Proust

Finally, keep this in mind when you consider kicking the habit:

"Your photography is a record of your living, for anyone who really sees." -Paul Strand

Oh, and I don't remember who said "When you buy a camera, throw away the lens cap," but it's capital advice. Or my version, "...sell the lens cap". 😀
