Foma.cz gives pretty good data sheets for their Fomapan films. You can start with their guidelines.
Fomapan 100 is a very universal film, like Agfa APX-100. It reacts in the same way. For sheet film in larger format you can even start with R09/Rodinal with it on E.I. 80 in rotary.
Fomapan 200 is very good in Xtol/Fomadon Excel W27 or even PC-TEA (Pat Gainer). The last one uses 1+50 and reacts like Xtol 1+2.
In R09/Rodinal you will have very sharp negatives with this film but pronounced grain.
In HC-110 I did not test these films in a wide range so maybe X-ray can add useful information about this.
