Bbq!!!

Here in OZ it's all gas bbq, back in Belgium the majority is on charcoal.

I must say a wel executed charcoal grill beats gas any time, just a bit more of a hassle.

You're BBQing with the wrong Aussies skibeer. Plenty charcoal here.

It is times like this that I wish I had taken a relevant photo weeks ago when I went past a Barbecue joint in Atlanta... The sign said:

"We Have the Best Smelling Butts in Town!"

But, of course, it is the butt. Preferably bathed in SC mustard sauce. ;)

Last weekend, while staying at my girlfriend's house in rural eastern Cuba, we had a family party at her grandmothers where we (OK, "they" not me) butchered and cooked a pig. Not real southern BBQ, just a whole pig with a pole up his ass and out his mouth over an open fire for 6 hours while everyone drank beer. But when we split up the remains at the end of the evening, she chose what was left of the butt.

What is the difference between Texas, Memphis, Carolina, Aussie, etc. Barbecue????

Is it sauce? The way it is cooked? A rub?
 
Don't forget Kansas City and Omaha. However, having now migrated to NC I can definitely say they do NOT have editable barbecue. Barbecue sauce here is vinegar with spices.

I actually liked the NC style at Lexington BBQ when I was there with Greg last month. It does beat the Mustard style prevalent in Columbus GA by a fair margin.

Although KC style is tasty also.
