New to a Canon 7, when attempting to load a film I find it very difficult to get the small hook of the take-up spool to 'engage' with the second sprocket hole of a film leader (as per the Instruction Book, and also applying to the Canon P, apparently.) I am using standard Ilford 36exp cassettes/cartridges,, viz not loading bulk film into reloadable cassettes & trimming leaders myself. (Never have).
Hoping for replies from other 7 and or P users describing their 100% infallible technique :bang:
 
I've never bothered with trying to get the film holes to align with the "tit" on the take-up spool. I simply press the end of the film leader into the slot firmly (without forcing) and make sure the film holes on the leader are fitting into the pins of the film transport sprocket. Then I advance the film a couple of winds before closing the back, just to make sure that it's taken up correctly.

The "hook" you describe is just a "bump" which (imho) serves very little purpose. Instructions for later SLRs that have the same bump don't even mention it.
