Brian that's pretty good color on the Sonnar for a prewar model. I'm not as impressed by the prewar Zeiss Orthometar or 2.8cm F8 Tessar with color film (such film probably did not even exist when these lenses were designed or was super rare!) - they both flare pretty badly too, but at least that's controllable to some extent. While I love all these lenses, I prefer using coated glass when I care more about the results than the existential experience if you know what I mean!
 
While your points about flare, etc. are well taken, I think you can get decent color performance out of uncoated lenses. Mostly, I just avoid super-contrasty lighting & bump up contrast w/an "S" curve in Photoshop:
