Many people uses metronomes and count the seconds! I remember my first prints I didn't use anything. Besides that you can use to save your print times, etc

well assuming that you don't put your phone directly in the paper it's ok. Put if you want you can use something to block light. Paper asa is about 7-10 very low

for the enlarger control: you could add coreMIDI to this so we (I) can build a simple note-on/note-off relay electronic and hook it up to my iRig MIDI.

There's many ideas on the table like bluetooth, plugin jack, but I want to avoid physical connections, iphone 5s is a very different connector.

bluetooth is a protocol mess IMO also Apple doesn't open up all bluetooth functionality which hinders some embedded applications. also the lamp control electronics would need to be by far more advanced.
advantage is you can put your phone far away from the paper without cable mess.
using the audio interface would take away the possibility to play audio signals at the same time, right?
midi is straight forward: note on for lamp on and note off for lamp off. One could also use a camera connection kit + cheap USB-MIDI interface instead of the iRig/MIDI mobilizer/Griffin or whatever.
All I'd need is a 8bit µC, an opto-coupler and an AC relays plus 1h of debugging. (or others could go the arduino way)
