Back when I shot digital with a Sony A7II, I basically did monochrome jpegs, with only slight occasional tweaking in Photoshop. Very basic, but it met my needs. I know I'll get flamed for saying that!
You won't get flamed by me. Shooting B&W JPEGs is pretty much all I do. It's more like shooting film in that you limit yourself to what's in the camera and not all the potentialities of a Raw file. But I have to admit I fiddle with my JPEGs a lot in post processing--Silver Efex plus Lightroom with lots of burning, dodging, bleaching and selective sharpening and contrast, etc. Same stuff I did in the darkroom but done more comfortably sitting down in room light.
What digital system would you choose? Maybe an appropriate question for the thread: “What digital system produces the most aesthetically pleasing BW to you?”
They can all can produce great photos. 'Course I haven't used them all but I have used Canon, Olympus, Fuji and Nikon and they all are capable of great B&W photos. Choosing a system comes down to what your like using the most--the comfort factor.
