Has anyone here moved to the DR5 process for their negs that they know they are going to be scanning? I have a trip coming up and will be shooting a lot of B&W that I will be scanning and I'm wondering if the stories of its ease of scanning versus traditional development are true or overbaked.

I have scanned a few. Not enough to say that it's easier, but if your scanner has the dmax and you expose it right for the conversion, I see no reason why it wouldn't be easier to scan.
Then again, IMO, if you have your exposure and development times right, then there isn't any reason why that won't scan well, either.
