Not a fan of the "one lens is liberating" school of thought.
At the same time, I'm not a fan of the "I own it, so I brought it" school of thought.
If I were going on a trip in which photography were going to be a major element (i.e., more than just snapshots), there is no way I'd take only one body/lens. It would be two bodies and 2-3 lenses.
One wide, one normal and one telephoto. The only reason I'd bring the normal lens is to back up the wide and the telephoto. It's not a perfect backup, but it can do a little of what they do.

I forced myself to go with one body/one lens on my last 14-day trip through England: I took only my Fuji X100 and although I found myself wanting a 50 occasionally, I just forgot about gear and got down to shooting. It was very liberating.

M5 w/ 35mm or Hexar Af and a bag of HP5 usually works for me. Less is more.

Less is more. I overanalyze really badly, so when I have too many lenses and/or cameras I end up futzing around needlessly with different lenses or formats or settings and it just ruins my flow.
2 lenses, 1 body. Done. 28mm and 50, or 25mm and 35.
