Expiration date after having shot a roll?

So, we all know there's an expiration date for film. I'm wondering if that date is still relevant after having shot the film. I know it's advised by the manufacturers to have the roll developed as soon as you have shot it, but for me that doesn't work, since I develop myself and tend to develop in bigger batches. Does it matter how long you wait and should you adjust developing times? A couple weeks/months probably doesn't matter, but hypothetically speaking, can you develop a roll of film that expired in 2013, but was shot in 2012, in 2020 without any problems?

Yes I've processed many films shot between 1940-1980 with surprisingly good results–not that it should be done 🙂

This is Agfa Ultraspeed shot in 1940-42 and developed by yours truly in this century
