What is available?
I want to start educating myself in case a bargain shows up. I know there are some variable focus cams like the Canon G series.

DP-1 or DP-2 if you want to buy the overpriced external VF. Amazon just had the DP-1s for $299 and I put in an order for one. Today I looked and the price is jacked up about 90 bucks. But if you read the posts here, there seems to be a lot of RF users very satisfied with the DP photo quality. Take a look at them and snap one up if another sale comes up. Just keep in mind they aren't p&s's but more of a learning curve is involved. More like p&t (point and think)
 
i would suggest not limiting yourself to fixed lens. a decent zoom range is almost always useful. the level of distortion is so minimal in most high-end p&s cameras that its not noticeable or it could be fixed very easily.

look for a camera:

-shoots raw
-at least 28mm in the wide end
-image stabilization
-hot shoe
-good grip
 
There definitely are some options if you're willing to put an external viewfinder on a viewfinderless camera.

Earlier today I was researching the Ricoh GRD series, $300-ish used, plus a $200-ish 28mm OVF to match.
 
Ricoh Caplio RR211 - it's small cheap camera with ~50mm lens and optical VF (not very accurate, though). Best thing is one can disable auto-off and switch off display, then it flys for days on two freshly charged NiMh's - I mean, without being switched off for extended periods.
