There is one folder that no one seems to have mentioned yet, though to be fair, it is not often thought of as a folder. Or even a rangefinder.
Have you considered a Speed/Crown Graphic?
It may seem silly, but I was using my Speed Graphic the other day and realized that it is indeed a folding camera. Not quite pocketable, but a folder none the less. If you get a late model, you can even use rollfilm backs, though it is much better for 4x5 format. There were smaller models made as well, but I haven't used them.
If you want to get into LF photography cheap(ish) it's one way to go. It's also one of the few ways to do handheld LF. It is not however for the weak of stomach, at almost $1 per shot it can add up fast. It is also deserving of the name "brick" especially the speed graphic with the focal plane shutter. My outfit, with standard lens, 3 D-cell flashgun (to fire the shutter), and Grafmatic magazine (6 shots before reloading) probably weighs around 15 lbs!
It is fun though, the stares and questions you get when you whip out the old press camera and start taking pictures.

Well if you consider the Crown Graphic a folder, then any large format field camera qualifies a s such.

Brick is an Argus C3. Crown Graphic is a cement block! Used one in my youth. Two coat pockets crammed with holders, another full of flash bulbs. Even stuck a real press card in my hat a couple of times. Had athletes take a swing at me. Shots of Detroit's '67 riots. And one almost naked coed.
