Depends on what you want to try. The SWC and Polaroid back are going to cost you a pretty penny. You'd probably want to shoot boring old regular negatives with the SWC anyway
As far as shooting the FP3000C film, you're going to have to find a camera that accepts pack film. A Speed Graphic with the right back will get you there. Pretty much every 4x5 camera will get you there. In terms of Medium format, I am not as sure. The Polaroid 600 SE can do it.
I think the best idea is the Mamiya Press. They're very inexpensive, have lots of great lenses, lots of different film backs to use. There's even a guy on ebay who fit an Instax Wide back to one

That SWC looks more temping by the day.
If you want to adapt something to use Instax with another camera, take a look at the Lomography backs for the Belair (Instax Wide) or LC-A (Instax Mini).This winter I'm going to have fun with one of those.
Another guy adapted an Instax Wide belair back to fit on the Mamiya Press. This is a really cool combo!
There's also a guy who tried to fit the Holga Instax mini back onto his Hassy 500CM but it looks like it didn't work out.
I like the idea of taking one of those instax Mini cameras and hacking it and leaving the electronics in it. This way after you shoot the frame, you click a button and the photo comes out.
