Highlights & Shadows in the Olympus OM-D

I have two questions about adjusting highlights and shadows in the OM-D: (1) Is there any quick way to readjust these to the starting point, or do they have to be reset with the dials, and (2) Are there any advantages to doing this adjustment before shooting as opposed to during later post-processing? Thanks for any answers or opinions.

Push function button 2 after camera is turned on - focused - and a square with diagonal line will appear. You can move the diagonal line for shadow and highlight adjustment with your arrow buttons.
