Sometimes they're eaten, sometimes they're tossed. Some of the things you wouldn't want to eat because they've either been poked and prodded by several hands, or some of the items on the dish are strictly for decoration and are not edible.

In the case of the 'cakes' that I shot for Duff Goldman / Ace of Cakes, they were all just styrofoam underneath the fondant and decoration (but they were all specifically made for their Ace of Cakes book project). This is the only real cake of his that I shot:
