Build it around the sink and keep wet and dry areas far apart. Don't try to get by with trays on a counter. Get a sink to hold the trays, even if you have to build a plywood sink and treat it with epoxy or fiberglass. I made my sinks out of sheet PVC, going strong after 18 yrs.
