How to get 1900's look pictures today?

Richard Barnes believes that with wet plate coating technique it still is possible to achieve the 1900's look.

Roger Fenton had his photo van in 1855 during the Crimean War.

Surely wet plate had pretty much disappeared rather before 1900, except in graphic arts?

The wet plate process started to disappear around the early 1880s with the advent of commercially available dry photographic plates.

I find it funny that photographers using these old processes and methods seem to underline the various defects in the images, as if being extra sloppy just to get that ragged edge or chemical blotch while the working photographers of the process's heyday probably worked hard to minimize these same defects.
