I have a couple of years of experience of photoshop and I use it for the bulk of my coursework at school.
I look at a lot of books, but the book I personally swear by is Photoshop Studio Technques by Ben Willmore (ISBN 0321213521). The book is very conceptual, and gives you some great techniques for touching up and enhancing photos. The book covers Photoshop CS; though the differences aren't extremely different from 7, there are a couple of features the author touches on that don't exist in 7.
Bear in mind it's not a manual, so if you're still fumbling with the photoshop interface, you may want to pair this book up with a dutful reference such as the Photoshop Bible.
