Kim Coxon hosts disassembly instructions for the J-8 and J-3. The J-3 instructions include the shimming stuff.

The Sonnar focus shift- the practical answer is the actual focus can can change with F-stop. The "best" focus shifts backwards slightly as you stop the lens down, and is most noticeable going from F1.5 to F4.
