I'm searching the manual and trying to find a way to shoot DNG with a b&w view on the LCD. I'm not interested in jpegs, but I would like to revert back to color in Lightroom when I like. Can be done?

Only option is to shoot RAW + JPG. Switch saturation to b&w in the menu. Then you have b&w preview in the display. Problem is that RAW + JPG makes saving even more slower.
