I'm thinking about using an M8 as an exclusively black and white camera. Is it possible to do this, while shooting RAW and importing into (and processing with) LR6, and never see a color file? I guess this would involve creating some kind of camera-specific import profile...is this a thing?

Probable the easiest way of going about would be to create a Preset or Presets say one for low ISO images one for high ISO images, one for low contract, one for high contrast images....... and then at the start of the import process simple select the desired one for the drop down list.

As stated above, you can create preset and just select it while importing. I have one for my Ricoh GR.

Another way is to go ahead and import the file. After completing import, hit CTRL- A and hit V. It converts all the pictures you see into B&W.

That's easy to do. Shoot RAW with B&W mode selected, so you'll get your B&W preview picture.
In Ligthroom: open a M8 file, set your B&W settings you want for every M8 picture, click on the "Develop" menu and then "Set Default Settings...", confirm. Now every M8 RAW file you'll import will automatically get those settings :)

Superb, thank you!

I'm not sure if they will be shown in B&W in your LR library. I don't know if LR uses the RAW as preview or the embedded preview picture (which should be B&W when shooting in B&W mode).
With "Set Default Settings..." LR saves the adjustments you've performed on a picture as default for every next imported picture with the same camera (color profiles, curves, sharpness, I guess everything).
