iOS:
iD Release - not needed it, but you never know
Field Tools - a lens and camera database that then allows for FL measures
Light Meter - does what it says and is as accurate as any dedicated meter I've tried
Film Tracks - manages a database of cameras, lenses, films, locations, etc. (use for b+w)
AnaLogger - same as FilmTracks but I use for colour films (not sure whihc is best yet)
Theodolite - takes a photo and maps it and everything else...a must try
Hipstamatic - does some neat retro stuff
8mm - another retro for video
Flickr - as it says, and the new version is actually really good now
Thirty Six - as the title says, only 36 shots before you get to see any of them; a disciplinarian photo app if there ever was one
Strip Design - I use it on photos I send the kids and it has a really good output
360 - for panoramas, and actually does a really good job for web-viewing
Phanfare - my online photo and video archive service

I use FilmDeveloperTimer Pro and like it a lot, nice developing aid (it calculates development times based on film, developer, temperature, and dilution, plus countdown and agitation reminder). Also the LightMeter app is pretty good. Haven't tried the pro version, but the free one is the most accurate light meter app that I know of.

I just realized that my light meter app goes all the way to f512 which makes it useful for pin hole photo work...

I'm a big fan of:
Hipstamatic
Oggl (Social Hipstamatic, very cool stuff)
Photoshop Express
Camera+
Decim8
LightBomber
TinyWorld
MiniatureCam
Light Meter
FX Photo Studio
I probably use Oggl/Hipstamatic the most of all of those.

Oggl doesn't work at all... This should never have been released in it's present state - way worse than an alpha and has totally screwed up many an instagram account.
This is how hipstamatic should have been designed in the first place, but it is completely not a finished workable app...that is why they issued it as invite only - the idiots KNEW it didn't work!!!

Massive Dev Chart (actually I use it on an ancient iPad 1 that doubles as my ghetto home darkroom timer)
VSCO CAM (surprised nobody mentioned this one)
Camera+
Mirrorgram
Pop Camera
8mm (video app with "vintage" 8mm effects)
...does the tumblr app count?

For panoramas, the Microsoft Photosynth is very good.
