I was shooting on my canon 7 using both 50mm and 135mm lenses and had some odd light leaks. The lighting was incredibly bright (exposures were f/16 1/1000s). Im confused as to the cause of these leaks as the seals have been replaced and the shutter is steel, heres an example:

Does anyone have any suggestions of what could have caused it as I have shot 5 rolls since and had not a single issue.

I'm with Peter. I think reflection coming between the 1st and 2nd shutter curtains (while shutter is closed). Light leak is from the left when facing the front of the camera (right when facing the back), is even across top to bottom but shielded from immediately next to the shutter edge. I guess the bright lights correspond to wrinkles reflecting light. Remember these leaks occurred before you exposed the image.
The other option to consider are hinges etc but I doubt it.

Light coming through the lens is aimed directly at the shutter curtains. Without a lens on, light is coming in at all different kinds of angles. All it takes is just a little bit of light getting around one of the baffles.

Okay, I was somewhat careful and did shade the camera, however there is also a rather large dent at the left side where the door is secured but I think youre right and I should just shield the camera in these conditions,

Are you sure the curtains are intact?
One of the curtain (metal) on my Canon-7 is torn half-way - there is a very tiny thin gap near the clip that holds the start (or end) of the curtain. It was so thin that I missed it when inspected the camera at the first time, and it gave light leaks very similar to the one you show. I taped the tiny gap and it's fine now.
