It's been said a couple times already, but Latex on OS X ROCKS!
TeXShop is a rather nice program. I would also recommend BibDesk.
Personally, I spend a lot of my day in BBEdit, so I use a BBEdit/Applescript/TeXniscope solution for Latex that I like more than TeXshop. But for out of the box use, it's hard to beat TeXshop.
One of my favorite bits of OS X is the access to a real command line. I end up doing a lot of my data processing with shell scripts and python on my mac.

Wait a year for CS3 to come out as native so you don't have to go through Rosetta (it sucks the performance right out of the machine in PhotoShop) and then get the Mac.
