Are all photo contests nothing more than trolling for photos and by entering said contest you are giving away ALL rights to your image?

Well, I've yet to see a single contest that goes that far - the worst I've seen was a contest (addressed at budding freelance PJs) co-sponsored by Getty that attempted to force the winner (and all his past and future work) into their worst possible contract, but even that was (poorly) paid. But it is very common that they stipulate that the winners (or sometimes even all contestants) abandon all rights within the publicity of the contest holder without further compensation.
But as the advertising value of typical contest photography is debatable (the former ad/studio professional in me says it is more often harm- than useful), they usually don't really steal much off their participants. Or when did you last earn a significant amount of money selling a HDR image of a cow in front of a sunset to the regional water works?

Many contests are nothing more than money making opportunities for the organizers sadly....

The “Nikon Photo Contest” (NPC) is the new name for what was formerly the “Nikon Photo Contest International” (NPCI), a contest held by Nikon since 1969 with the goal of “contributing to the development of photographic culture by providing a venue for communication among photographers from around the world, be they professionals or amateurs”.
