Proof Sheets w/V700

Do any of you scan your negs as proof sheets using the Epson V700? If so how do you do it? Do you leave the negs in the sleeve?

I do it with a Mikrotek i800, which is a large flatbed that scans transparent items using a lamp in the lid. I put my negatives in a PrintFile sleeve, and tape it to the edges of the scanner, pulling the sleeve taught to enhance the flatness. Here's one, note that it's not perfectly flat:
