Yes, with the digital age, and reviewing images on 27" uber HD monitors, I think we can't help but more critical of sharpness...with 35mm film however, it's a bit different...
When shooting film, sharpness is important, but it's far from being the most important aspect -- the tones on BW film, the grain, add a rich dose of atmosphere, which I find lacking from my digital images...no matter how big or new the latest sensor is. Maybe if shooting macro or something, or an interesting street scene which begs to have the details noticed, ok...but for portraits, artistic / creative shots, mood rich shots, not very critical.
I think in the case of some photogs, bad technique may account for some less than sharp images, and lead them believe a lens is less sharp that it actually can be. A good ol' fashioned tripod isn't as once used as they used to be.
In any case, I feel most modern lenses maintain more than adequate sharpness if shot properly. To me, it's all about the rendering -- I have maybe 4 - 5 different 50mm lenses -- they all render a scene uniquely with their own special signature -- someone previous mentioned a painters brushes being different -- makes sense...something to that effect.
