Searching for a film+dev combo for a modern look

Sorry didn't catch that
Here are a couple shot with a Minolta 7S

All mine are shot at 400iso and developed HC110 1-49 for 10 mins with 1 minute initial agitation and then 10 seconds every minute and then normal fix and rinse.

Thanks for the details, Don! That's helpful information, and seems in line with the articles posted on Ilford.

Though I must say, the example that Corran posted with TMAX 100 looks incredibly clean and detailed. Or maybe I'm just googly-eyed looking at all that Nikon gear. ;)

T-Max 100 and T-Max developer is about as modern as it gets. Use a tripod if you need, 400-speed film ain't gonna have the low grain look.

This combo can be tricky. Years ago I perfected a semi-stand development scheme using between 1:19 to 1:49 dilution for 1 hour at ~70F using T-Max dev, which is definitely not on the "recommended processing" guidelines but who cares, it gave me more consistent results.

I got negatives that looked almost identical to shooting my D800 in b&w mode, with just a hint of texture from the film grain:

Ok so I really want to know the specifics. This is exactly what I'm looking for!!

Yes, it's 35mm.

The film was semi-stand developed in T-Max developer 1:19 IIRC. I experimented with using dilutions up to 1:49. I think a middle-of-the-road option worked best, around 1:31.

This is highly unusual for T-Max developer and I developed this procedure myself. It worked really well for extremely low grain, high sharpness images from 35mm. I found it less useful for larger formats because they were already very good due to the film size advantage.

Shoot a roll or two at various EI settings and figure out what works best for you. The other advantage is this is much more economical than traditional development with T-Max developer. But you need to test and make sure it works for you - no guarantees since this is fairly off the beaten path. Your mileage may vary, especially depending on if you are scanning or wet printing. I developed this mostly for scanning at the time.
