The two keys to turkey or any other food frying safety is don't over fill the frying vessel with oil and make sure the bird is dry before you dunk it in the hot oil. My dad has a fryer that we have used on occasion, and I love the results. My wife uses the oven bags and they are pretty hard to mess up. One year, when she was sick, I did one myself in an oven bag with no prior experience and it came out great.
