Have to have a UV filter here in sandy, sunny, humid Florida for my CV Color- Skopar 35mm/2.5. I shoot mainly B & W. Should the filter be Multi Coated?

Yes. You have an excellent lens. Get an excellent filter for it. A B+W MRC F-Pro UV filter is my recommendation. Adorama has them for $37.00 and free shipping. The B+W product nr. is 66023183. You will not regret it.
Edit: Just visited the link and they are out of stock. An eBay vendor has them for $39. I've bought from this particular vendor and they are OK.

It's not exactly a high priced lens. Modern lenses have very hard coatings. I'd be more worried about getting sand in the focus helical than on the surface someplace. My 15mm Heliar goes everyplace with me hanging naked from my left shoulder, no filter, no cap.
I doubt that you'd notice any difference between single and multi.
