how wide does it get when you switch to 6x7? I reckon it should be around a 40 on the 35mm, but how does it work in real life? is there any noticeable difference?

You're close enough with your figures, but the lens ratio will be the same whether it's 6x6 or 6x7. When comparing medium format to 35mm, the other real difference is the decreased DOF. You'll have to stop the lens down considerably more to get the same DOF as 35mm.

It depends on what you are comparing.
I you just compare the horizontal angle than 80mm on 6x7 is equal to 40mm on 35mm. 80mm on 6x6 would be 50mm on 35mm.
