The most flexible / buildable medium format system?

Definitely Holga. No other camera brand has so many colors
to match your many moods and coordinate with your outfits.

Chris

I use a Fuji Pet atm, I like it a lot better than Holga--besides I try to avoid cameras that are available at most bookstores. ;)

I started with the RB67. Incredibly versatile and high quality camera including bellows focussing. But using it for travel is quiet difficult, after spending a month climbing the hills of Israel with a 14kg bag containing my RB kit I knew I needed something else.

Just got a Mamiya 7ii and its incredible how small and mobile it is. To be honest I'm still adjusting to shooting with a rangefinder but I'm sure soon enough I will be completely comfortable with it.

In a slow, controlled environment I still prefer shooting the RB67 as you have a huge amount of control with it, but in terms of travel/documentary/on the fly photography, the mobility and image quality of the Mamiya 7 cannot be beaten I think.

Good luck

Well, I am leaning towards the Mamiya 6 still. So we'll see. I'd like to actually hold one in my hands first.

Does anyone have any experience with the auxiliary close up lenses that can be used on it?

I recently acquired a Makina 67. I've found that I take it along much more frequently than my Pentax 645 system, despite the rather beautiful lenses I have for the latter camera. It's very portable, and yet 6x7, with a very capable (Nikkor) lens.
So purpose and opportunity are factors. I just need to find a protective case, too, so I will bring it along even more frequently (I cannot always bring the bag along).
That said, the Pentax 645 system has incredibly sharp lenses and the upgrade path to the 645D. Very happy to have both. The 120mm Macro lens is stunning. So is the 35mm. Or the FA 150mm, FA 200mm.
I considered the Mamiya 6 for a portable system, too, but have no experience with it. I would be interested to hear about its rendering.
These days, with eBay and forums, it's not too costly to try out a used system. So go with your intuition.
