The shutter speeds on the go

I'm just wondering how many people here shoot street while walking, ie without stopping. I've figured out, that 1/1000 is safe, 1/500 works most of the time for this shooting style, 1/250 is already blurry sometimes. And if you do shoot like this, what speed do you set?
 
Yeah, I learned the hard way that even 1/500 and 1/750 can be blurry if I'm in motion. I try to at least pause and use breath control, regardless of shutter speed.

In fact, I'm able to get motion blur when I'm standing still. I occasionally make movement at the moment I press the shutter release (a personal problem). Or even too much coffee makes for blurry photos. It's amazing how very much more influential motion of the camera is, compared to motion of my subjects.
 
The most deceiving camera for me was an Olympus-OM2n, 1/30 was always blurry, however while shooting it felt rock solid and very stable. Of course I didn’t move. On the other hand, I could shoot 1/8 with leaf shutter of Iskra and it was stable. 1/500 in motion on Iskra was blurry however.
