Don`t know the answer to that Jamie ...I think its different for everyone.
Something interesting going on but thats not always going to be the case.
As for myself I just try and get as close as I can and I tend to avoid motifs although people who are attracted to those elements will often point them out to me in some of my shots.
I too would like to here other and wiser heads views on this.

I just take snapshots, seldom thinking about it before hand ... then pick the pretty ones off the contact sheet, so what I do is more editing than anything else.
It's not, never been about 'art' or anything precious ... just snaps as mementos that happen to have been taken in an urban setting then selected to suite my designer aesthetics ... and it's difficult to reduce that to a single image
I did write this to explain my artistic point of view some time ago if that helps

Summer 2012 in Tokyo hotel. I noticed some very attractive girls in the elevators with older, frumpy men in my hotel. One girl was with a 60ish guy in a suit, she was quite attractive and young. (these shots might be more appropriately labeled "lobby" rather than "street".)
In my travels through the lobby, I noticed a certain area where attractive young girls toting large handbags would be sitting. They would meet these older guys and go up in the elevators. The handbags probably contained cosplay or bondage gear, they were obviously on the game. I didn't mention my observations to my wife.
That afternoon, I sat myself down in the "hooker area" of the lobby with my Leica M9 half hidden in my lap with Avenon f2.8 21mm lens (not really the right tools for the job), and captured this sequence. The girl sat there about 10 minutes, the John approached, and they walked off to their room.
Focus, white balance and shutter speed obviously take second place to the sequence of documented incident. I did almost no post processing other than crop.
By the way, it is not hard to find film or used classic cameras in Tokyo as of 2013:
These are the souls of infants who died in childbirth. Each statue is erected and dressed by the parents of the dead child. The pinwheels are to remind the souls that everything comes around again and they may be reborn:
