Loving all the Beijing advice, thanks everyone for contributing. But where's the love for Mongolia ha. Guess there's not as much to be said in general, but seems less people are exploring this country.
Did happen to come across this group called stepperiders. Which seems like a cool way to experience Mongolia, thinking I'll be staying there and doing their treks for most of my time there. Will post feedback after!

Mongolia is great. It's a big country with lots to see and not much infrastructure. You will need to spend time driving large distances between sights. If you have a week, I would pick a region and concentrate on it exclusively. The Gobi desert would be a good place to start. It has quite a few sights. The country is amazing and is changing very quickly. There is lots for the photographer to shoot. In Ulaan Bataar I enjoyed the Winter Palace of the Bogd Khaan, and what was called something like the "Communist War Crimes Museum".
